Teacher's Dairy

Dear all teachers,

After two years of being absent of teaching, I come back to teach again. Feeling happy because I would see the faces of future generations would be made me feel very enthusiastic. since I have to replace the previous teacher I should start from the previous lesson taught by the previous teacher.
To my surprise, the students could not remember what they have got. "What's wrong with them?" the question passed by on my mind. Did we teach the using the right method to our students so that the students remember the lesson well.
It should be kept in our mind that the proper technique applied in our teaching will influence to the success of the classroom teaching activities.
as teachers, we should have various kinds of methods or techniques and know which one is appropriate to the need of certain materials. if one is not suitable, we should change with another.
So, keep in mind, what we have done in our class if after the class the students' competencies are still low or nothing. Change your teaching style then.

MENYEDIAKAN MAKANAN SEHAT DENGAN BAKSO ORGANIC

(HOW TO MAKE ORGANIC MEAT BALL)

INTRODUCTION

Tulisan ini terinspirasi oleh teman-teman kuliah saya di Universitas Negeri Malang angkata 2009 Depag yang baik hati untuk mau hadir, kumpul dan bikin bakso rame-rame sekaligus menyantapnya dengan penuh rasa syukur dan ..... Yang setelah makan mereka ingin mendapatkan resepnya. Untuk menghindari catatan mereka yang kemungkinan hilang dan sms lagi untuk mendapatkan resepnya, maka saya memutuskan untuk menulisnya dalam blog kita tercinta. Semoga pembaca yang lain bisa mengambil manfaatnya. Amin. Mohon maaf gaya tulisan saya kali ini agak narcis tidak lain agar pembaca lebih nyantai membacanya sehingga bisa membaca artikel ini sambil tersenyum agar terkesan simple dan menghibur. Terima kasih atas apresiasinya selama ini membuka blog saya. Komentarnya ditunggu ya? Semoga tulisan saya tetap bermanfaat. Mohon maaf, agak lama saya belum bisa up load artikel karena kesibukan saya untuk menyelesaikan thesis saya. Doakan bro, agar thesis saya segera kelar dan bisa mengabdikan ilmu saya untuk kemajuan Indonesia kita tercinta.

Maraknya pemberitaan di media massa mengenai banyaknya jajanan yang tidak sehat di sekitar kita, terutama yang beredar di sekitar sekolah sempat membuat orang tua merasa was-was. Itu semua karena orang tua merasakan bahwa dampak yang ditimbulkan sangatlah mengerikan. Di antara pemberitaan itu adalah mengenai masih banyaknya makanan yang mengandung MSG (monosodium glutamate) yang berlebihan, formalin dan zat pewarna tekstil dalam makanan yang beredar di sekitar sekolah-sekolah. Bukan hanya itu, pembaca yang baik hati dan tidak sombong, tetapi, minyak goreng yang biasa dipakai oleh para penjual sering kali tidak pernah diganti atau selamanya—kalau boleh agak menekankan. Padahal para ahli nutrisi menyarankan kalau minyak gorengpun harus kalau sudah dipakai tiga kali harus sudah dibuang alias tidak boleh dipakai lagi. Sudah tahu apa belum ya? Eh sekarang baru tahu. Amin kalau begitu.

Makanan adalah bagian yang sangat penting bagi manusia—karena kita semua harus makan setiap hari—khususnya kalau kita tidak pernah puasa senin-kamis. Pembaca jangan tersinggung ya? Cuma ngingatkan kok, nggak lebih apaagi minta bayaran, terlebih sebagai orang tua, menyediakan menu makanan sehat menjadi modal berharga tidak hanya bagi kesehatan generasi kita ke depan tapi juga bisa mempengaruhi perkembangan otak anak-anak kita di masa depan selain juga hemat. Karena bahan-bahan seperti formalin yang biasanya di pakai untuk mengawetkan mayat dan zat pewarna tekstil, dan minyak goreng yang tidak pernah diganti kalau dikonsumsi manusia bisa menyebabkan penyakit kronis nis nis nis.

Salah satu makanan yang disukai anak-anak dan juga kita adalah bakso (meat ball). Bahkan makanan ini tidak hanya monopoli—maaf ini bukan nama games ya, rakyat Indonesia tapi juga manca negara seperti Malaysia, Singapura, Hongkong, Taiwan, Thailand bahkan sampai masyarakat Amerika dan Eropa juga banyak penggemarnya (Wibowo, 2010: 5). Tidak percaya?—datang saja ke sana, tapi jangan lupa ngajak saya ya? Hehehe. Konsumsi bakso di Indonesia sangatlah besar; diperkirakan jumlah konsumsinya mencapai angka 868 juta butir bakso per tahun dengan estimasi bahwa penduduk Indonesia di tahun 2008 (saat sensus) adalah 238 juta dan masing-masing dari mereka mengkonsumsi sebutir bakso saja (Wibowo, 2010; 6). Selain itu, padahal, bakso juga bisa divariasikan dengan berbagai macam isi agar lebih sehat, bergizi dan tidak membosankan.

Tapi tahukah anda, para pembaca yang ingin hidup sehat, bahwa seringkali bakso yang tersedia di mangkok kita mengandung terlalu banyak bahan kimia seperti bahan pengenyal, pemutih, dan pengawet serta MSG yang berlebihan? Yang lagi-lagi bermuara pada kesehatan kita semua dan masa depan bangsa juga. Tapi sebagai orang yang bijak alias bakso mania pastinya anda ingin tetap menyintai dan menyantapnya. Apalagi kalau kita adalah orang tua dan calon orang tua atau yang mau menjadi tukang bakso alias bisnisman dibidang perbaksoan di rumah kita dengan menyediakan bakso organic atau bakso tanpa bahan kimia, pengawet dan pengenyal. Pembaca adalah orang yang super, jika bisa melaksanakannya. Nah berikut ini cara dan produser eh sorry, prosedur alias tahapan bagaimana menyediakan bakso organic.

Bahan-bahan:

1 kilo daging yang masih segar (kualitas satu/yang paling mahal harganya)

Tepung kanji/tapioka 250 gram boleh kurang tapi jangan lebih

5 butir telur (yang empat butir dipisahkan kuningnya)

6 siung bawang putih (digoreng dulu)

6 siung bawang merah (digoreng dulu)

5 gr merica bubuk

2 sendok garam halus

½ sendok gula

Boleh ditambahkan daun selederi yang sudah di cincang sesuai selera agar aroma bakso semakin sedap (tapi ini suka rela).

Semua bahan-bahan di atas disiapkan sebelum beli daging dan pergi ke penggilingan daging (kalau di malang—di pasar dinoyo satu kilo daging ongkos menggilingkan daging per kilo adalah Rp. 4000 dan tempatnya di bagian paling belakang pasar). Nah lengkap kan? Apalagi yo? Kalau sudah beli dagingnyo, silahkan anda pergi ke belakang pasar dinoyo, jangan lupo, bawa bahan-bahan tadi yang sudah disiapkan dari rumah.

Bahan lainnya yang harus disiapakan adalah:

Tulang sapi (untuk camouran kaldu agar semakin terasa kaldu sapinya)

Jeruk nipis (bagi yang suka asam)

Kecap manis

Saus tomat

Daun bawang, seledri, bombai secukupnya.

Bihun dan mie kuning

Lontong (tidak wajib)

Cabe untuk sambal (untuk yang suka pedas. Biasanya cabe direbus dengan air dan dihaluskan. Tidak digireng).

Untuk variasi isi:

Nanas, keju blok, coklat blok, udang, cabe, dan udang.

CARA MEMASAK:

1. Masukkan adonan dalam freezer sekitar 2 jam (sesuai pengalaman saya sebagai pakar bakso, ck ck ck narcis BGT gitchu lhoh! Prosess pendinginan dalam freezer bisa membuat tekstur bakso jadi kenyal secara alamiah.

2. Masak air tanpa bumbu di atas kompor yang sudah menyala itu loh (Ya iyalah harus menyala). Ha ha ha.

3. Siapkan wadah atau baskom yang agak besar dan isi dengan potongan es batu. (kenapa pakai es lagi. Lagi-lagi ini digunakan untuk mengenyalkan bakso yang ke dua kali. Tapi bagi bagi anak kos yang tidak tersedia freezer langkah ke tiga ini bisa digunakan. Untuk mereka yang memiliki fasilitas freezer bisa menggunakan langkah ke dua dan tiga semuanya).

4. Jika air sudah mendidih, pegang sendok di sebelah kiri dan tangan kanan membulati. Jangan lupa membasahi sendok agar tidak lengket dan membasahi bagian tangan yang membuat bakso lengket di tangan. Jika sudah di anggap bulat sendok adonan dari tangan kanan dan masukkan ke dalam wadah yang sudah berisi gumpalan es batu untuk membuat bakso kenyal secara alami. Setelah beberapa saat masukkan bakso yang berada dalam wadah direndam dalam air es tersebut ke dalam panci yang sudah mendidih. Lakukan sampai adonan habis ya? Jika bakso sudah mengambang berarti bakso sudah matang. Tapi kalau tidak percaya biarkan agak lama agar masak sempurna.

Variasi Isi Bakso

Sebagai mana yang dipaparkan dalam pendahuluan di atas, bakso sehat adalah bakso yang memiliki nilai gizi yang diperlukan oleh tubuh. Jika bakso menjadi menu harian, maka bakso bisa di variasikan dengan berbagai macam isi agar anak-anak kita (eh.. abi dan ummi juga) bisa menjadwal hari senin mau yang rasa apa, selasa apa, dan seterusnya rasa apo). Ah ado-ado sajo. He he he. Bisa isi coklat, nenas, keju, udang, telur puyuh, telur ayam bahkan cabe yang sering kita lihat ada bakso mercon atau granat (seperti uni dan dang, untuk sobat tercinta, yang suka pedas). Tapi harus dipisahkan untuk yang variasi terakhir agar tidak memakan korban.

Untuk yang menggunakan variasi tadi, berarti udang harus dikupas terlebih dahulu apalagi nanas wajib dikupas. Nanas harus dipotong dadu-dadu, udang juka terlalu besar bisa dipotong kecil. Telur puyuh juga harus dikupas kulitnya ya? Jangan lupa itu.

Caranya untuk memasukkan variasi di atas, ambil satu potong varian, lalu masukkan dalam bulatan dalam tangan kita. Pastikan bahwa isi tertutup sempurna, kecuali telur puyuh. Mengapa? Jawabnya pasti karena jika varian selain telur terbuka akan mempengaruhi air yang akan kita pakai sebagai kuah bakso.

Membuat Kuah Bakso

Bekas air bakso bisa dimanfaatkan untuk kuah dengan cara memasukkan bumbu-bumbu. Bumbu yang biasa dimasukkan dalam kuah biasanya, selain tulang sapi adalah: merica bubuk, bawang bombay (boleh tidak), bawang putih, garam dan gula. Bumbu-bumbu tersebut sebaikkya dihaluskan kecuali bawang India (ya iyalah) dan digoreng. Sebelum dihidangkan, sebaiknya bakso dimasukkan dalam kuah sampai mengambang agar semakin lezat menyantapnya.

Sebelum menyantapnya, siapkan bihun, mie kuning yang sudah masak. Kalau bihun pakai air dingin sajo agar tidak lengket. Lontong yang sudah dipotong-potong agar makanyya semakin gmudah dan lahap.

Selanjutnya pasti bisa mengerjakan langkah berikutnya, jika bakso kebayakan bisa disimpan di freezer. Bagi yang anak kos, bisa dimasukkan magic cooker atau dikirim ke tetangga agar dapat pahala. Yoi. Bagi ibu-ibu yang mau untuk persipan bekal anak ke sekolah bisa di goreng lagi (jadinya bakso goreng).

Appendix 1

The King and the Jester

There once lived a king. There was a jester in his court. The king was so fond of him that he spent most of his time with him. Whenever he went, the jester always accompanied him.

One day, the king accidently cut off one of his fingers. He called his jester and showed his bleeding hand to the jester and exclaimed. To his surprised when he showed it to his jester the jester said that it was all for his best. Being unsatisfied with the answer and full of anger, he fired him out of the palace.

The jester felt sorry for what he had said. He asked apologized to the king and he begged for the king’s forgiveness again and again. But the king remained firm and the jester left the court.

After a few days, the king went out hunting all by himself. He hunted for a while and grew tired. While he was resting under a tree, suddently there appeared a gang of armed men.They were looking for a man to be offered as sacrifice. They were glad to find the king alone, weary and helpless. They were so many, and so strong that the king could no resist them. He gave himself up without a fight.

They noticed the king’s body carefull. “He seems to be just right. ”But let’s make sure that he is perfect. Nobody with physical defect can be sacrificed to our goddess.”They exclaimed the king and noticed that one of his fingers missing. “Leave the man,” said the leader. “He is not fit.” So the men released the king and the king went away thinking his good fortune.

As soon as the king returned to the palace, he sent for the jester. “I am sorry. I dismissed you,” said the king to the jester. “You were right. It was indeed for the best that my finger was cut off.” He narrated what had happened in the forest. “If my finger had not been cut off, they would have killed me,” he concluded.

The jester said, “If you had not dismissed me, I would have escorted you to the forest. If I had escorted you, they would have offered me to the goddess. It is all for the best, isn’t it?”

The king laughed heartily and gave him twenty gold coins.

A Bear and a Rabbit

Once upon a time there lived as neighbors, a bear and a rabbit. The rabbit was a good shot and the bear, being very clumsy, could not use an arrow to a good advantage.

The bear was very unkind to the rabbit. Every morning, the bear would call over to the rabbit and ask the rabbit to take his bow and arrows and come with the bear to the other side of the hill.

The rabbit, fearing to arouse the bear’s anger by refusing, consented and went with the bear. The rabbit shot enough buffalo to satisfy the bear’s family. Indeed, he shot and killed so many that there was still lots of meat after the bear and his family had loaded themselves and packed all they could carry home.

However, the bear was so greedy and evil that he didn’t allow the rabbit to any of the meat. The poor rabbit couldn’t even taste the blood from the butchering, as the bear would throw earth on the blood and dry it up. The poor rabbit would have to go home hungry after his hard day’s work.

The bear was the father of five children. The youngest boy was very kind to the rabbit. Knowing that the youngest boy was a very kind hearty eater, the mother bear always gave him an extra large piece of meat. Instead of eating this extra meat, the youngest bear would take the meat outside and pretend to play ball with it, kicking it toward the rabbit’s house, and when he got close to the door he would give the meat such a great kick that it would fly into the rabbit’s house. In this way, the poor rabbit would get his meal unknown to the papa bear.
